IQF is one of those abbreviations that gets printed on cartons without anyone explaining it. It stands for individually quick frozen, and both words matter. “Individually” means every piece freezes on its own, not as a block. “Quick” is where the quality lives.
Slow freezing ruins fruit
Water in a mango cell freezes into crystals. Freeze slowly — say, a carton in a household freezer — and those crystals grow large, puncture the cell walls, and the fruit collapses into mush when thawed. Freeze fast enough and the crystals stay small; the cell walls survive; the thawed piece still has bite.
Our tunnel does this with air at −35 °C moving at high speed across a fluidised bed. The mango pieces are lifted and tumbled by the air, so cold reaches every surface at once. From entry to exit takes about eight minutes for a 20 mm chunk. The core reaches −18 °C before the piece touches another piece.
The eight-hour rule
The tunnel is only half the story. Fruit that sits for a day before freezing has already started to break down — enzymes keep working, sugars start to ferment, colour dulls. So we run a simple clock: from the moment a mango leaves the tree, it must be through the tunnel within eight hours. Our orchards are forty minutes from the plant. That was the reason we built here.
Freezing does not improve fruit. It only stops the clock. The trick is to stop it as early as you can.
After the tunnel
- Pieces pass a metal detector and an optical sorter that removes anything off-colour.
- Product is packed by weight into polybags and cartons, then palletised.
- Pallets move into the −22 °C cold store next door — no truck, no temperature bump.
Data loggers ride with every pallet from the tunnel exit to the container. When a buyer asks us to prove the chain was never broken, we send the graph, not a promise.
